Each year we brew Stubborn Russian Imperial Stout to help our comrades survive the alpine freeze of winter. This big rich brew draws on the old English tradition of brewing strong roasty stouts for export to the Russian Imperial Court.
This year, we again partnered with our friends and local artisan producers from the Bright Chocolate Factory, which is located only 100 metres from our brewery. The chocolate makers selected Tanzanian cacoa nibs and husks as the best flavour profile to infuse into this brew, which they added to the mash. A second addition was added via a “dry hopping” technique, late in the maturation stage.
This 2018 edition also includes a lacto addition to provide a silky smooth body.
